Potato-Cheese Supreme

We were recently asked for this recipe, and since it had to be typed up to e-mail, we thought we would post it on the blog. This is our favorite potato recipe; we usually serve it during the holidays. The nice thing is that it has to be prepared ahead of time, so there is one less thing to worry about on busy cooking days. And, it is delicious! Sorry to those watching their weight, this is not a low-cal or low-fat endeavor.

Potato-Cheese Supreme

9 medium potatoes
1/3 C butter
1 C half & half
1 C whipping cream
1 Tbsp salt
1/3 pound velveta cheese
4 oz. shredded sharp cheddar cheese

Boil potatoes with skins on until tender, cool and peel.

Grate potatoes on largest hole. Cut butter and velveta into small cubes.

Arrange potatoes, cheese, butter and salt in layers in greased baking dish.

Pour cream and half & half over mixture. Let stand in the refrigerator for 24 hours.

Bake uncovered for 1 hr. at 350 degrees. Sprinkle cheddar cheese on top and bake for an additional 15 minutes.
